Biscotti per nostalgici

Cosa c’è di meglio di entrare in casa ed essere avvolti dal profumo di biscotti caldi appena sfornati, oppure, rilassarsi e scaricare le tensioni impastando?

Ecco la soluzione: biscotti speziati al pan di zenzero.

Fuori stagione? No, se si tralasciano le decorazioni di glassa colorata e le tipiche forme natalizie.

E’ una ricetta che adoro e che ho ritoccato per venire incontro ai miei gusti e alla difficolta di trovare la melassa con cui l’impasto viene resto malleabile.


Gli ingredienti per circa 40 biscotti sono:

420 gr. di farina 00,

100 gr. di zucchero,

120 gr. di burro morbido,

160 ml. di miele,

1 uovo grande o 3 uova di medie dimensioni,

3/4 di un cucchiaino di bicarbonato di sodio,

1/4 di cucchiaino di sale ,

2 cucchiaini di zenzero macinato*,

1 cucchiaino di cannella macinata*,

1/4 di cucchiaino di noce moscata macinata*


*Solitamente parto da queste quantità, per poi aumentarle rimanendo nelle stesse proporzioni. Più zenzero e cannella aggiungerete, più intenso sarà il sapore dei biscotti.


                                         Procediamo…


Setacciate la farina e mescolatela bene con le spezie, il bicarbonato e il sale in una ciotola.

Lavorate con una forchetta o una frusta, in un’altra ciotola di grandi dimensioni, il burro ammorbidito e lo zucchero fino ad ottenere un composto spumoso, in seguito, aggiungete l’uovo e il miele continuando a mescolare. Unite lentamente la farina e impastate.

Dividete il composto in due parti, avvolgetele con pellicola trasparente e lasciatele in frigo a riposare per circa 5-6 ore, più tempo passa più la pasta profumerà.

Finito il tempo si posa, stendete la pasta con il matterello su un piano infarinato, fino ad ottenere uno spessore di circa 4-5 millimetri. Tagliate l’impasto con le formine che preferite o create dei bastoncini da ricoprire con un pò di zucchero fino o di canna.

Preriscaldate il forno a 180 gradi, disponete i biscotti su delle teglie ricoperte con carta forno e cuoceteli per 10 minuti, fin quando i bordi dei biscotti si saranno imbruniti.

Il profumo è intenso, ricco e speziato.

E’ impossibile resistere a queste piccole bontà.

Out of season? No, if you skip the coloured icing decorations and traditional Christmas shapes.

It ‘a recipe I love and I reworked to suit my tastes and the difficulty of finding the molasses which makes the dough more malleable.


The ingredients for about 40 biscuits are:

420 gr. 00 flour,

100 gr. sugar,

120 gr. soft butter,

160 ml. honey,

1 large egg or 3 medium eggs,

3/4 teaspoon of baking soda,

1/4 teaspoon salt,

2 teaspoons ground ginger *,

1 teaspoon ground cinnamon *,

1/4 teaspoon ground nutmeg *


*I usually start with this amount, then I increase them with the same proportions. The more ginger and cinnamon you add, the more intense the flavor of the biscuits will be.                                                            


                                               Process


Sift the flour and mix it well with the spices, baking soda and salt in a bowl.

Work with a fork or a whisk the soften butter and sugar, in another large bowl, until you have frothy mixture, then add the egg and honey, stir constantly. 

Add the flour slowly to the butter mix and stir.

Divide the mixture into two parts, wrap them with plastic wrap and leave them in the fridge to rest for about 5-6 hours, the more time passes the more the dough taste is good. 

After the resting time, roll out the dough with a rolling pin on a floured surface, until your dough is thick about 4-5 mm. Cut the dough with your favorite cookie cutters or create sticks you can cover up with a little bit of white sugar or cane sugar.

Preheat the oven to 180 degrees, place the biscuits on the sheet pens covered with baking papers and bake them for 10 minutes, until the edges of cookies will get darker.

The aroma is intense, rich and spicy.

It’s impossible to resist these little goodness.
